Zsnes is supposed to save by default, there must be something wrong from your end.

Are you running zsnes or the roms from a cd?

Is the folder from where you are running the roms read only?

If you copied your files from a cd to your mac, chances are they might be read only, maybe try changing the folder properties in order to create saves.
