I record games to put them on youtube but I now make a series with more retro games
I am not able to configure the only way and write in standard form more resolution and
very low when I try to increase is buggy video

You can't just change the resolution, you need to add a scale filter. The resoultion you changed is the resolution the encoder expects from zsnes, so it got all messed up. You can add the scale filter to the mencoder command line with -vf scale, or if there's already a -vf argument, add scale to that (look up mencoder documentation for details on this.). You can also just do the final resizing in post.
